Traditional Baked Pandan Pudding (Kuih Bakar Pandan)
Another one of my favourite traditional kuih (dessert), simply because of the fragrant daun pandan (screwpine leaves) and the lovely velvety texture of this baked dessert. It was my first attempt and I was quite pleased with the result. Though I'm not a kuih connoisseur, I'm happy with it's taste and will definitely have another go at this when I get a chance, God Willing.
Try it..it's simple :)
Kuih Bakar Pandan
150gm plain flour
6 eggs
400gm sugar
200ml thick coconut milk
200ml pandan syrup (made with 6 screwpine leaves processed with 200ml water, strained)
1 tspn salt
1 tspn sesame seeds (roasted)
Method:
- Preheat oven to 170deg. Grease 8" cake tin well with butter or margarine.
- Beat eggs and sugar till fluffy.
- Add coconut milk, pandan syrup, salt and flour. Mix well.
- Preheat cake tin, remove from oven.
- Pour batter in the tin, bake for 10mins. Remove tin from oven when top begins to set and sprinkle sesame seeds evenly on top.If you sprinkle the sesame too soon, the sesame seeds will sink into the kuih.
- Continue to bake for 30mins or till top is golden and crusty.

**Someone suggested adding Durian Pulp to the batter...WHOA! That'll be total indulgence if you ask me..heheee. Interesting idea. Thanks :)
