Simple Banana Muffins with Almonds and Choc Chips.
This is a true quick one for breakfast or tea-time. Or just about anytime of the day when you need a nice quick snack without the hassle of whipping up or baking a cake. Simple enough as you only need to melt the butter, mash the bananas and add them all in to the flour and the rest of the ingredients. I substituted the castor sugar with soft brown sugar as I prefer the lesser-sweet taste of muffins. The best part is when it's baking in the oven and the aroma fills the house....simply yummmy!
Banana Muffin with Almonds and Choc Chips.
- Makes 12
2 cups Self Raising Flour (sifted)
3/4 cup castor sugar
60gms butter (melted)
2 eggs (slightly beaten)
3/4 cup milk
1 cup mashed bananas
1/2 cup choc chips
** for a healthier option, add 1 cup of oat bran to the mix.
Topping:
1/2 Almond nibs or slivers
extra choc chips or choc rice.
Method:
- Place sifted flour and sugar in a large bowl.
- Make a well in the center. Pour in melted butter, eggs, milk and mashed bananas. Add choc chips.
- Mix quickly but batter should be lumpy. Do not over beat or muffin will turn out heavy.
- Spoon mix into a greased or lined 12-hole muffin pan.
- Sprinkle Almonds and choc chips on muffins before putting in the oven.
- Bake in 210deg cel for 15mins or until golden and cooked when checked with skewer.
** Finally...got an oven!! Nothing fancy but am so thankful for having one. Now I can continue trying out new recipes and 'practice' old ones ;)
