Simple Marble Cheesecake

I've always had this fear for making cheesecakes. Ingredients are pretty costly and I'm always afraid of the cake not turning out well. BUT......I DID IT! I tried out this simple recipe and have been making a few for family occasions ever since, receiving compliments that they tasted like those bought from a  popular cheesecake shop here. Try it...and see for yourself.

Marble Cheesecake

Crust
200gm Sweet Biscuits ( I used Choc Tiger biscuits - crushed)
100gm Butter (melted)
1 tspn honey

Crush or process biscuits. Add melted butter and honey.
Spread on a prepared 20cm springform tin. Press firmly at the base and up the side of the tin, about 1/2 the height.
Chill in the freezer.

Filling
500gm cream cheese
3/4 cup castor sugar
3 eggs
1 teaspn vanilla essence

80 gm cooking chocolate (semi-sweet, if you prefer)

With a hand mixer, cream the cheese and sugar till soft. Add eggs one at a time. Mix well. Add vanilla essence.

Scoop 1 1/2 cup of cream mix into another bowl. Add the melted choc to this portion.

Alternate scoops of cheese mix followed by choc mix on to the prepared crust. Then with a knife, make swirl patterns to form 'marble-effect'.

Bake in baine-marie in a preheated 180deg oven for 55mins. Leave cake to cool in the oven for about 45mins then chill for at least 1 1/2 hrs before cutting/serving.
