CHOCOLATE BANANA LOAF with WALNUTS
Another Chocolate recipe...YEAY!
I just love chocolates and I'm willing to try any recipe with chocolate in it. This one which I made over the weekend is such an easy one, just melt and mix. The extra bit about this loaf is that it has walnuts and that they have to be toasted briefly which adds crunch to your bite. And the yummy taste of the banana just adds to the unique taste of this loaf. Great for kids lunchbox. Try it :)
You'll need:
Preheat oven to 180deg cel.
Grease and flour a loaf tin.
1/2 cup of walnuts - toasted and chopped
1 3/4 cups all purpose flour
1/4 cup cocoa powder
1 cup castor sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup choc chips
Mix the above ingredients well in a large bowl
2 large eggs - slightly beaten
1/2 cup butter - melted and cooled
3 bananas
1 teaspoon vanilla.
Mix these ingredients well.
Make a well in the flour mix and pour the egg mix. *Mix just enough and allow the batter to be lumpy, just like how you make muffins. Pour batter in prepared loaf tin and bake for about 45-55 mins or till a skewer comes out clean when checked.
Let cool for 10mins before turning out.

*Note: Be careful not to over-mix the batter or the loaf will turn out dry and tough. When I tried this recipe for the first time, I over beat the batter, and yes it turned out dry...hehee....well practice makes perfect :)
