CHOCOLATE MARBLE LOAF





I've always wanted to try baking Marble Cake. I get discouraged each time, thinking that it needs some special touch to make that swirl. So I searched for a recipe that doesn't seem intimidating to me. It's actually a quick-bread recipe, but it's really moist and rich that is so much like a traditional cake. I've made an addition to the recipe. I added a teaspoon of instant coffee powder to the warm melted choc for added flavour and I've reduced the sugar to 1 cup only  :)


Verdict: Yummy moist cake with rich flavour.

Will definitely bake this again!!





You'll need....
115 gm chocolate chopped
1/2 cup of milk (divided to 1/4 cup + 1/4 cup)
1 teaspoon coffee powder (optional)
1 1/2 cup All -purpose flour
2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup yogurt
1/2 (115gm) butter
1 cup castor sugar (original recipe calls for 1 cup + 2 tablespoons of sugar)
2 large eggs
1 teaspoon vanilla


What to do:
- Preheat oven to 160 deg celcius


- Butter and flour a loaf tin. Line bottom with parchment paper.


- Melt chocolate in a double-boiler with 1/4 cup of milk. Add coffee powder if you're using. Set aside.


- Mix flour, baking powder and salt. 


- Mix yogurt, balance of the milk and vanilla.


- Cream butter and sugar till creamy and pale. Add eggs one at a time and beat well.


- Fold in flour mix alternate with yogurt mix.


- Divide batter to 2 portions. Add melted choc mix to one, and mix well.


- Pour batter alternately into prepared loaf tin. Using a flat bladed knife, make swirls into the batter. Not too much or the batter will mix.


- Bake for about 50-55 mins till skewer comes out clean when checked.
