APAM BALIK....simple and delicious!


What's a mom to do when the children are into their exams? She distracts herself with cooking and baking! YES..it's the UPSR week last week. Thanks to God it's all over and that we hope dear Abang did well. One of the things I tried was Apam Balik, a traditional pancake with fillings of peanuts, sweet corn and a sprinkle of sugar. The truth is, this is the 2nd recipe I've found and I'm glad the end result turned out well. So glad! Traditionally it's cooked with a brass flat pan with a cover. But since I don't have it, I used a small non-stick pan. 

You'll need:
Makes about 4-5 small thick apam balik.

3/4 cup of milk
1 cup of Self-Raising Flour
2 tablespoons of sugar
1 teaspoon vanilla
1 egg
1/4 teaspoon bicarbonate of soda
1/2 teaspoon baking powder
1 tablespoon butter (melted)
a pinch of salt

*Filling:
1/2 cup peanuts (roasted and pounded/crushed)
2 tablespoon sugar
3/4 cup cream corn
margarine/butter

Method:
1) Mix egg, sugar and vanilla till sugar dissolves. Add half of the milk.
2) Fold in flour and pour all of the balance milk.
3) Heat pan well and pour about 3/4 cups of batter to form thick pancake. While it bubbles and the edges cooks, sprinkle the filling. When the bottom browns evenly, fold the pancake into half and remove.
4) Continue step 3 & 4 till batter is finished.

*The filling can be changed to your own preference. My children don't like peanuts and sweetcorn, but they love it with choc chips and grated cheese.
