Daging Masak Stew Kampung [Kampung-Style Stew]
This is one comfort food! My late mom-in-law taught me this and it is so simple. It's a cross between French Onion soup and Beef Stew. Nice dish for a light meal.
You'll need:
3 large Onions (Red) - sliced thinly
500gm beef (topside) - sliced across the grain (daging batang pinang)
3 1/2 cups of water
2 bullion cubes (you may add more if you like stronger beef taste)
3 tablespoons Sweet Soya sauce (kicap manis)
1 bay leaf (optional)
1 tablespoon tomato paste (or you may use ketchup)
Salt and Pepper to season.
2 Large Russet potatoes cut into wedges and pan fried (for serving)
French loaf ( for serving)
- Heat up a deep pan with some oil. Saute onions gently till wilt and transparent as well as fragrant. This is the most important step in this recipe. The well-sauted onions will give this stew the rich taste. Be careful not to burn it as it'll make the stew have a slight bitter taste.
- Add the slices of beef. Cook through until the meat changes colour.
- Add the water and allow to boil slowly.
- Add soya sauce, ketchup/tomato paste and bay leaf as well as bullion cubes.
- Slow boil till beef becomes tender.
Serve with garnishes of coriander and the fried potato wedges.
Dip french loaf or any bread rolls in it. We love it with some chilli padi (bird's eye chilly) with it.
