Fruit Cake with Pineapples.

I looooooove Fruit Cakes. Especially those dark, moist and rich ones, laden with fruits and nuts. I usually make steamed Fruit Cake till I found this recipe from the famous Chef Wan. Love it. Full of flavour and most importantly easy to make. 

This one is boiled and baked :)


Fruit Cake with Pineapples.
450gm pineapple rings in a can - diced and set syrup aside
3/4 cup castor sugar
3 tablespn honey ( I used Golden Syrup for the extra rich flavour)
125gm butter
2 cups black raisins
1/2 cups sultanas
a pinch of salt
1/2 tspn cinnamon powder
1/2 tspn mixed spice
1 tspn bic of soda
2 eggs
1 cup all-purpose flour
1 cup self-raising flour
1/2 cup walnut (chopped)

- Boil pineapples, the syrup with sugar, honey, butter, raisins and sultanas, salt, cinnamon and mixed spice for 12-15mins. Remove from heat and add bic of soda. Set aside to cool.

- Beat eggs and add to fruits mixture.

- In another bowl, add both flour and walnuts. Add to fruit mixture. Mix gently..

- Pour in prepared 20cm tin in pre-heated oven at 170deg for 1hr or till cooked when tested with skewer.

You may wrap in aluminum foil and store airtight in the fridge for about 2 weeks :)
