Banana Lemon Cake

I've been baking the same few recipes these last 2 weeks - its either the Chocolate Brownies or Muffins, apart for Dad's batch of  Raisins Scones last week. So I decided to bake something new, something for Me. I checked in the kitchen and I've some bruised Bananas and a bagful of Lemons. I was contemplating if I should just make Jemput-jemput or Cekodok Pisang (Fried Banana Sweet Batter). But I don't feel like having something fried. So Banana Cake it is! With a TWIST. I found this simple recipe that calls for some Lemons! Fantastic....and here it is. Moist and soft, it tastes great too! The Lemon zest and Lemon Drizzle on top makes it refreshingly tangy!

BANANA LEMON CAKE


140gm butter (melted)
2 eggs beaten slightly.
1/2 cup of milk
Juice of 1 Lemon
3-4 medium Bananas, mashed.
vanilla extract.


2 cups of All-Purpose Flour
2 teaspoons of baking powder
1/2 teaspoon of baking soda.
Zest of 1 Lemon
3/4 cups of castor sugar ( I used soft brown sugar, losely packed).
Zest of 1 Lemon


- Preheat oven to 175deg
- Prepare 8" tin, greased and lined.


- Melt butter and cooled.
- Add Lemon Juice to Milk and allow to curdle for about 5-10 mins.
- In a bowl, add melted butter, beaten eggs, vanilla extract and mashed bananas. Mix gently.


- In another big bowl, sift flour, baking powder and baking soda.
- Add sugar and Lemon Zest.
- Make a well in the center and pour butter/egg/banana mix as well as Milk/Lemon Juice mix.
- Mix batter. And pour in prepared tin.


Bake for about 30-40 mins or until cake is done, toothpick comes out clean when tested.


Lemon Glaze:
Juice of 1 Lemon
1 cup of Icing Sugar.


- Mix well and drizzle on cake.
- You may adjust the amount of Lemon Juice and Icing sugar if you don't want it too sweet or too sour :)
