Super Simple Chocolate Muffins

These are made just this afternoon for the boys' lunch-boxes tomorrow. As soon as I took them out from the oven to cool on the rack, 3 muffins gone! And the aroma...wow....just GREAT! Somehow anything with chocolate is truly therapeutic to me... nice :)


It's simple and super quick. And you don't need any electric mixers at all. The beauty of making Muffins...Yeah!


Chocolate Muffins
makes 12 large muffins


Preheat oven to 190 deg Celsius.
Prepare 12 muffin-cup tray (greased). Or you may use paper cups.

125gm butter - melted and cooled
2 large eggs - slightly beaten
1 cup buttermilk - I used yoghurt
vanilla extract

>> mix the above wet ingredients together in a bowl.

2/3 cup cocoa
1 3/4 cups all purpose flour
1 1/3 soft brown sugar
1 teaspn bic of soda
1 teaspn baking powder
1 cup chocolate chips
extra chips to top muffins (if desired)

>> mix the above dry ingredients in another bowl.

- Make a well in the center of the dry mixture and pour the wet ingredients in. 
- Carefully fold the batter, but do not over-mix. It's ok for batter to be lumpy.
- Fill up muffin 3/4 full and bake for 20mins in preheated oven 190 deg.
