Cinnamon Rolls

I love Cinnamon Rolls. The aroma fills up the house with love and warmth. Found this recipe from Joy Of Baking and it was successful. I've already made it twice now and the second time, I only made using 1/2 the recipe as it's a little bit more manageable in kneading and handling.

CINNAMON ROLLS


* makes about 8 large rolls.


For the dough:
4 1/2 - 5 cups of all purpose flour
7gm yeast
1 cup of milk, slightly warmed
1/3 cup butter (75gm) melted.
1/3 cup (66gm) sugar
1/2 teaspoon salt
3 large eggs, beaten


Filling:
3/4 cups packed brown sugar
1/4 cups all purpose flour
1 tablespoon cinnamon
1/2 cup butter, cold
1/2 cup raisins (optional)
1/2 cup choc chips (optional)


Some milk to seal the dough and glace before baking


Glace:
1/2 cup icing sugar
1-2 tablespoon milk


Method:


Prepare the dough by mixing half the flour with the yeast. Using a mixer with dough hook, place flour mix in the bowl,  add the melted butter, warmed milk and eggs. Then, add the remaining flour until you get a nice soft dough. Place this in an oiled bowl, cover with plastic wrap and leave in a warm place to proof for about 1 1/2 hrs, or until double the size.


If you're using a bread machine, you can add the dough ingredients according to manufacturers instructions and order and select 'dough' mode.


After the dough has rises, remove it and placed on a floured surface. Knock it to remove excess air, and let rest for about 10 mins. In the meantime, prepare filling.


Prepare filling by placing brown sugar, flour and cinnamon in a bowl. Place the cold butter and using a pastry knife, cut the butter into small pieces while mixing it with the other ingredients. Add raisins and choc chips if you're using them.


Knead out dough and roll out to a rectangle about 30cm square. Sprinkle the fillings on the dough and start rolling from furthest away from you, to towards you. Brush some milk at the sides to seal it.


Cut in to even pieces of 8. Place on a prepare greased tin 33 x 23 cm. Leave to rise further for about 1 hour or double the size. 


Preheat oven to 190deg. Bake for about 25 - 30mins. Cover with foil if rolls browns too quickly.


Rolls should sound hollow when done. Remove rolls from oven and brush with some milk.


Let cool for 10mins and invert on wire rack before inverting on serving plate.


Mix Glace ingredients. Drizzle Glaze on rolls.
