Oatmeal Cookies





Made some munchies for myself a few days ago - some chewy Oatmeal Cookies. Love it! The best part about making it yourself is that you can adjust the sweetness and add ingredients which you really like. It uses rolled oats instead of the instant porridge oats type (probably due to the texture it gives at the end). I used chopped chocolate instead of the choc chips.


You'll need:


Preheat oven to 180 deg cel.
Line 2 baking sheets with parchment paper


1 cup                  walnuts, toasted and chopped
3/4 cup (170gm) butter, at room temperature
1 cup packed      brown sugar
1 large                egg
1 teaspoon         vanilla extract
3/4 cup (105gm) all purpose flour
1/2 teaspoon       baking soda
1/2 teaspoon       salt
1/2 teaspoon       cinnamon
3 cups                 old-fashioned rolled oats
1 cup                   raisins or choc chips


Mix the flour, baking soda, salt, cinnamon and rolled oats in a bowl.
In another bowl, cream the butter and sugar till light and fluffy. Add egg and continue to beat till well combined. Add vanilla.
Fold in the dry ingredients into the butter mix till well combined.


Place spoonfuls of batter on the baking sheets, leaving space in between (5cm apart). Gently flatten  each till they're about 1.5 cm thick.


Makes about 44 medium sized cookies.


Bake till golden.
