APAM TEPUNG BERAS ( Steamed Mini Rice Sponge)

More traditional desserts...YEAY! I love traditional desserts and cakes like this one. But since I'm not one of those patient ones who would toil over complicated recipes, I'd often go for one with simple ingredients and is not fussy with procedures. 


For this recipe, you may use Eno fruit salt. If you don't have it, try a teaspoon of bicarbonate of soda mixed with a teaspoon of white vinegar. The fizz will help make this mini cakes light and fluffy. You may also opt this ingredient out, they'll still taste great, but with a little heavy texture :)


This one is a beauty - simple yet very tasty.


You'll need:
1 cup of cold cooked rice
2 cups of rice flour
1 cup of castor sugar
1 1/4 cup of water
1 teaspoon of instant yeast
1 small pack of Eno fruit salt or 1 teaspoon of bicarbonate soda mixed with 1 teaspoon of white vinegar.
Food colouring (optional)


For serving:
some grated coconut, slightly salted.


* Mix all ingredients except the Eno in a blender and process till rice is fine. 
* Pour batter in a large bowl/container. Add the Eno fruit salt. Stir well. Add colouring if you like. Mix well.
* Cover container with plastic wrap and leave it to rise for at least 3 hours.
* Prepare steamer and make sure water is boiling rapidly.
* Pour batter in small jelly moulds or small muffin cups.
* Steam over rapidly boiling water for about 20mins.


Serve with grated coconut, slightly salted.
