CHOCOLATE CUPCAKES with NUTELLA FROSTING




What do you do when you have a craving? You cave in! Hehee...that's exactly what I did. I wanted so much to have some choc cake. Seeing that I have all the ingredients available in the Pantry, I decided to make some Chocolate Cupcakes instead. And to top it up, Nutella Frostings! This recipe is so simple that you can mix it all up in one bowl. No electric mixers required. Well, maybe you'll the need the mixer when preparing the frosting..hehee...!

Makes 24 half size/small cupcakes or 12 large cupcakes


You'll need:

Paper cases placed in muffin pans
Preheat oven to 175 deg Celcius

Sieve the following into a large bowl...
3/4 cup cocoa powder
1 1/2 cup Plain Flour
1 1/2 cup castor sugar
1 1/2 tspn bic of soda
3/4 tspn baking powder
3/4 tspn salt

2 large eggs (slightly beaten)
3/4 cup warm water
3/4 cup buttermilk/plain yoghurt
3 tablspn vegetable oil.
1 tspn vanilla essence

Mix sifted ingredients well with a whisk.
Make a well in the center and pour in eggs, warm water, buttermilk, oil and vanilla essence.
With a hand whisk, mix ingredients well till smooth.
Pour batter into prepared cases.
Bake for about 25mins. Or till cakes are cooked when tested with a wooden skewer.
Cool cupcakes on wire rack for about 5mins and remove from tin.

Cool cupcakes well before spreading the frosting.

Nutella Frosting
125gm butter (soften to room temperature)
1 cup Nutella
1 1/2 cups icing sugar (sifted to remove lumps)
some milk if required to get spreading consistency.

With an electric mixer, beat butter till fluffy. Add Nutella and continue to beat until well mixed.
Add icing sugar (sifted) a little at a time to ensure well beaten. Continue beating till smooth.
Add milk a little at a time to get a spreading consistency.

You may spread or pipe frosting. Sprinkle chocolate chips if you wish.

p.s. my frosting came out a little gritty...am not sure why. I was told that maybe it's the icing sugar I used which is either not properly dissolved in the creaming or that it's not good quality. Ah well.... all the cupcakes we gone fast enough, so I guess it's quite alright then :)

      You may use full-cream milk or fresh milk. I used full-cream for this recipe.
