EASY APAM ICE-CREAM (STEAMED TIE-DYE CUPCAKES)

I found a very interesting recipe, and in addition to this, it is very simple. It uses Ice-Cream Soda (drink). I made some changes to it - I added colours to the batter, 3 colors in fact. The original recipe only requires you to divide the batter in half and colour 1 portion in Pink while leaving the other 1 portion in its original color. I divided the batter into 3 portions and coloured them in Blue, Apple Green and Red. I chose to serve it with shredded coconut.

What you need
Prepare steamer with 12 aluminium cups lined with paper cups.

250gm castor sugar
1 tablespoon ovallette
3 eggs
300gms Self-Raising Flour
1 teaspoon baking powder
200ml Ice-Cream Soda

Food colours - Blue, Apple and Red (options are yours)

Method:
- Beat castor sugar, ovalette and eggs till light and fluffy.
- Sift Self-Raising Flour and baking powder. Fold in the flour mixture into the eggs mix.
- Lastly mix in the Ice-Cream soda. Mix well.
- Divide the batter in to 3 portions. Mix in the colours to each portion.
- Spoon in layers, each colour into the cups.
- Make sure the steamer is hot and boiling before putting the cups in.
- Steam cupcakes for about 10-15mins.

Serve with shredded coconut (slightly salted)

** SHEEN'S NOTE: Unlike other Apams which uses yeast (ragi) and requires you to let the batter sit aside for hours, this one is pretty straight forward. So you may not get the cracking (merekah) of the Apam at the top when you finish steaming it. It is more or less like the sponge texture, light with but slightly compact. Though I've been told that if the steamer is very hot, with the water rapidly boiling, the Apam may just have nice cracks on them (merekah). Will have another go at this :)
