BREAKFAST LOAF WITH DRIED FRUITS AND WALNUTS



I couldn't sleep while waiting for dear hubby to get back from work. So I decided to make some bread for breakfast instead. I used the Basic White Bread recipe and substituted some ingredients. Methods are the same too. 

1 cup warm milk (instead of water) 
3 tablespoons soft brown sugar (instead of castor sugar)
1 1/2 teaspoons of salt
3 tablespoons of melted butter  (instead of oil)

1 egg beated
3 cups of high protein flour / bread flour (you may need extra 1-2 tablespoons of flour if dough is still sticky.

1 teaspoon of powdered cinnamon
2 1/4 teaspoons of dried yeast.


1/2 cup chopped apricots
1/3 cup chopped prunes
1/2 cup sultanas
1/2 cup walnuts

some milk for glazing.


Note: Bake in a preheated 220deg oven for about 15mins, then lower the temperature to 190 deg and continue baking for about 30mins. Check if bread is ready when it gives a hollow sound when knocked.
