CINNAMON SWIRL LOAF - SIMPLE



I was trying out how can I 'modify' the SIMPLE White Loaf that I usually make. Considering that Gramps are here, I thought I should make something SPECIAL for BREAKFAST. I then took the liberty of adding some extra ingredients to the recipe. Don't judge me yet please. I am by no means a pro in baking...especially where baking bread is concerned. As long as the loaf is fit to be eaten and everyone loves it, I'm truly contented.

Unlike the store bought loaves, home-made bread don't last more than 3 days. Some store-bought loaves can last up till a week, and you still don't see any mold on them. I wonder what's in there. Nevertheless, I admit, I do buy them out of convenience :)

You'll need
A medium sized loaf tin (greased bottom and sides)...or any size you fancy. 

Dough:
1 cup warm milk
2 tablespoon castor sugar
3 tablespoons butter (melted)
1 teaspoon salt
3 cups of Bread Flour (high protein flour)
2 1/2 teaspoons of instant yeast.

Filling:
1/4 butter (soft)
1 tablespoon cinnamon
1/3 cup brown sugar
1/2 cup prunes (chopped) or you may use raisins.

Some milk to seal dough after rolling. Some melted butter to glaze before baking.

Kneading by hand:


  1. In a large bowl, dissolve the sugar in warm milk, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
  2. Mix salt and melted butter into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.

With a Bread Machine:

1. Place ingredients according to manufacturer's recommendation. Put to 'dough' mode.



Remove dough from pan/bowl.

Punch dough to remove excess air and knead lightly on a floured surface. 

Roll out into a rectangle, width should be approximately as wide as your baking pan.

Spread softened butter on it. The sprinkle the cinnamon and sugar. Lastly, sprinkle the chopped prunes. Brush some milk at the edges of the dough.

Gently roll the dough from the farther end, downwards towards you. Folded side under, tuck the sides neatly and gently bring the loaf into a greased loaf pan. 

Let it rise till twice the size, about 45mins-1 hour.

Heat oven 190deg.

When ready, brush loaf top with milk and melted butter.
Bake loaf for about 30mins. Bread is ready when it gives a hollow sound when knocked. Brush loaf with melted butter.

Carefully remove loaf from pan and let cool on wired rack. Let cool before slicing.

It's YUMMY eaten on it's own!
