Simple BANANAS STRAWBERRIES MUFFINS - Delicious!

There were leftover Bananas and because they're over-ripe, no one wants to have them. I thought maybe I should just mash them up and make muffins. There some strawberries in the fridge too, from the Strawberries Cheesecake we made the other day. I decided to add some of these in the muffins. 

I love muffins, because they're so easy to make. Just melt and mix. And they don't take long to bake too. So versatile! You can have them for breakfast or snack-time and even pack it for the kid's lunch-box for school! Cool eh :)



You'll need:
12-hole muffin pan
Paper cups if you're using them. If not, you'll need to grease the muffin pan prior to using them.
Pre heat oven to 190 deg celcius.

1 3/4 cups of flour
1 teaspoon baking powder
1/4 teaspoon bicarbonate of soda
1 teaspoon cinnamon
pinch of salt

3/4 cup castor sugar

2 large eggs (slightly beaten)
125gm butter (melted and cooled)
1 teaspoon vanilla essence
2 medium sized bananas mashed ( I used Del Monte type)
2/3 cup of chopped strawberries

1/2 cup choc chips (if you like)

Method:

Sift flour, baking powder, bicarbonate of soda and cinnamon. Add sugar and mix with whisk till well mixed.
Make a well in the center. Add melted butter, vanilla, bananas, strawberries and choc chips and stir with wooden spoon.
Do not over mix. It's ok for batter to be lumpy.
Fill up muffin pan. Sprinkle more choc chips if you like. And bake for about 25mins or till golden and muffins spring back when touched on top.

They smell delicious when baked! Thanks to the added strawberries :)
You may add some roasted walnuts or almonds if you like some crunch.
