Quick Bread Rolls


I had forgotten to buy bread for breakfast today and looking through the kitchen cupboard, I'm so glad the basic ingredients are there. Alhamdulillah.


Found this simple recipe on the net and have tried it a few times. I don't have a strong wrist and the good part is that even with minimal kneading, the rolls turned out fine. 


I'm a happy mommy!


You'll need:


2 1/4 cups of plain flour ( plus a little bit more for flouring the table top when kneading)

2 1/4 teaspoons of instant yeast
3       tablespoons of castor sugar
1       teaspoon of salt
2       tablespoons of vegetable shortening (Crisco)
1       cup of warm water (not too hot or you'll kill the yeast)
1       egg (beaten)

Method:


Place all the dry ingredients in a large bowl (flour, yeast, sugar, salt) and stir well using a handwhisk.

Add shortening to hot water and stir.
Make a well in the center of the flour mix and pour the liquids in (egg and hot water/shortening).
Stir carefully to incorporate the liquid to the flour until you get a lump of dough. 
Start kneading gently and you may need to add more flour if it's sticky.
Knead till you get a smooth dough that doesn't stick to the bowl.
Cover it with a plastic wrap and allow to rise about double the size. It took me about 1/2 hr.
Then remove the dough from the bowl. Knock it and knead again on a floured board.
Divide to 8 portions, shape it and place on baking tray.
Allow to rise again, while covered under plastic wrap (about 15mins).
Preheat oven to 220deg celcius.
When it time to bake, brish with beaten egg or milk and sprinkle some sesame if you like.
Bake for 10-12 mins.
