Kuih MAKMUR [Prosperity Biscuits]

Olskool kuih they call this!

The truth is, not many will make these for Raya. It is quite tedious as it requires you to slowly pinch patterns on the kuih, to make it look like a leaf. Most of the time it is filled with pounded roasted peanuts. But some have changed this to be filled with dates flesh and other pounded roasted nuts.

I was taught to shape it by my Father. The dough was usually prepared by my Mother and she doesn't have a proper recipe for this. I have tried a few and this one turned out to be quite satisfactory.



What you need
250 gms Butter

2 tablespoons Ghee
1 teaspoon salt
1 egg yolk
1 egg
1 teaspoon of vanilla essence
3 - 3 1/4 cups of flour
Green food colouring


Roasted peanuts skin removed and pounded

Some icing sugar for dusting.

How:
Cream Butter, Ghee, salt, and eggs till light and creamy. Add vanilla essence and food colouring (if using)

Slowly add in the flour and knead dough. It should be soft enough to enable you to shape it.

Bake in 160deg oven for about 20 minutes.

Cool them completely before dusting with icing sugar.
