Mexican Coffee Buns...YUMMM!!
Have you heard of "Roti Boy"? They sell the meanest Coffee Buns in town! I thought if we're going to have it so often, might as well learn how to make them. These buns may not be the exact version of those sold, but at least it's pretty close :)
I tried making them with part-portion of the recipe, because I'm not good at handling a big amount of dough. I'm sharing the full recipe here :)
I increased the coffee to an extra tablespoon and the icing sugar to an extra tablespoon for a more crispier top. Best eaten warm....hmmm....yummm...
And of course, be prepared for the aroma...it is fantastic!!

Mexican Coffee Buns
Topping:
200gm soft butter
160gm icing sugar [increase this to another tablespoon if you prefer a nice crispy topping)
3 eggs
2 tablespns cofee dilute in 1 tablespoon of hot water [I increased mine to another tablespoon of coffee]
200gm all purpose flour.
Method:
- Cream butter and sugar till light. Add eggs one at a time. Add coffee and fold in flour. Chill this while you prepare the dough.
Bread Dough:
500 gm bread flour
20gm milk powder
75gm castor sugar
1/2 teaspoon salt
8gm (2 1/2 teaspoon) yeast
1 large egg
270gm warm water
60gm butter melted
Filling
extra butter cut into 10gm cubes (as big as sugar cubes)
brown sugar (if you like)
Method:
- Mix flour, milk, sugar and salt in a mixer at low speed.
- Add yeast, egg, water and mix in low speed. Add butter and increase speed to bind. Remove dough and knead till it forms a soft dough.
- Divide dough into 55gm dough ( you'll get about 17-18 balls).
- Roll out and place 1 cube of butter. Sprinkle with some brown sugar if you like. Pinch the ends to seal the balls. And place them on a greased baking pan. Space them well as these buns will expand.
- Proof for at least 45mins or until buns double the the size.
Preheat oven to 190deg celcius.
When you're ready to bake the buns, remove the topping from the fridge, place it in an icing bag and pipe out the topping in circles. It doesnt have to be perfect as the topping will melt as you bake it.
Bake till the buns are golden about 20mins.
