POTATOES CURRY PUFFS

I love Curry Puffs or any pastries for that matter....! It's the cispiness plus spicy filling that truly appeals to me. I consider it as my comfort food. I usually use ready-made frozen puff pastries as it is simpler and definitely quicker. As my older son doesn't fancy this, I'd make some Chocolate Puffs instead. Another simple treat :)


Feel free to adjust the proportions of the ingredients based on your personal preference.


You may make this in advance and store it in an air-tight container in the freezer. When you're ready, just defrost in the microwave  to thaw and it's ready.


You'll need:


Ready-made frozen puff pastries. (I used Kawan Brand as these are ready-cut into 10 square pieces.)


1/2 kg potatoes ( boiled till tender and cut into cubes)
1 small onion 
4 cloves of garlic
1cm ginger
1 cinnomon stick
1 star anise
1 tablespoon Meat Curry Powder
1 teaspoon ground cumin
1 teaspoon ground fennel
1/2 cup of water
1 tablepoon oil.
salt and sugar to taste.


- Pound till paste onion, garlic and ginger. 


- In a cup, mix curry powder, cumin and fennel with a little water to form paste.


- Heat up oil in a pan and saute pounded ingredients, cinnamon and star anise. Add mixed paste and stir well. Cook till fragrant.


- Add potatoes and water. Continue cooking till spices coat the potatoes.Mix well.


- When done, remove from heat and cool filling before use.


Curry Puff and Choco Puff
Assemble the pastry using egg wash to seal and brush with yolk before baking in a preheated 205 deg oven for about 15-20 mins.


As for Choco Puffs, fill pastry with choc chips. Brush pastry with milk or egg white and sprinkle choc rice.
