Apple Cinnamon and Raisins Cake with Walnuts Topping

I bought this huge bag of apples - a mix of granny smiths and fuji apples recently, and had the urge to make something out of them. And so I did. 2 cakes. One tart and sweet - Apple and Lime Cake, and the second the heavenly Apple Cinnamon and Raisins with Walnut Cake. Each with its own unique taste and texture. Love both cakes and they taste great with hot mug of coffee or tea.... Just my thing to unwind.. :)
I'm sharing this recipe with you- one of my favourites, because it's so easy to make. Don't need to cream the butter - no hassle at all! Just melt the butter and mix everything in....YES..all in  one shot and pop it in the oven. Soon enough you'll be able to smell the heavenly scent of cinnamon filling up the house.....hmmmm.....nice! APPLE CINNAMON & RAISINS WITH WALNUTS
250 gms apples (peeled and diced) - that's about 2 medium sized apples. You may want to squeeze some lime/lemon juice to this so as to avoid discouloration when you prepare the cake batter. Put aside.

2 1/4 cups of Self-Raising Flour
1 1/2 teaspoon of cinnamon powder
1/2    teaspoon of salt
1 1/2 cups of soft brown sugar
1/3    cup raisins
125  gm butter (melted)
2     eggs (slightly beaten)
1/4  cup milk


For walnut topping, mix the following:
1/2 cup chopped walnuts (other nuts such as almonds would nice too)
1 tablespoon castor sugar
1/2 teaspoon cinnamon

Method:

Sift the flour, cinnamon and salt in a large bowl.
Add sugar and raisins.
Add melted butter, milk, eggs and diced apples. Mix well.
If you find the batter alittle thick or stiff, you may add a tablespoon of milk till you get the right consistency.
Pour in a prepared 8" deep pan  and sprinkle walnut topping. 
Bake in 180deg oven for about 1hr or till cooked when tested with a skewer.
