PRUNE CAKE

A few days ago, a friend at school told me how she tried baking this and it turned out well, after which she insisted that I tried it too after giving a copy of the recipe to me.
So today, while waiting for hubby and the boys to 'ta pao' (pack) lunch for us, I experimented. I changed it a bit and here it is, 1.5 hrs later. Verdict: Moist and refreshing! If you're looking for a cake that's not too sweet and tart, try this. Great with a cup of coffee. Thanks Farah and Nahar for the recipe. Love it!

The pic here is taken 15mins after taking it out from the oven! Heheee...I couldn't wait and had to have a small slice to have a taste.

PRUNE CAKE

1 cup pitted prunes
1 cup of water.

Put these in a pot and gently simmer till it gets soft, mushy and water almost dried.
Remove from heat and mash lightly. Put aside to cool.

250 gm butter
1 cup castor sugar
4 eggs
vanilla essence (optional)
2 cups of flour
1/2 cup of yoghurt/sour cream ( the original recipe calls for 1/2 cup milk fermented 10mins with juice of 1/2 lime)

Cream butter and sugar till light and fluffy. 
Add eggs one at a time and beat well in between. Add vanilla.
Fold in flour alittle at a time.
Add in alternate manner the yoghurt and prunes to the cake mixture.

Pour in a prepared 8" deep pan and bake in 160deg preheated oven for about 50mins, or until skewer comes out clean when cake is cooked.
