Salted Threadfin and Pineapples with Spicy Coconut Gravy (Ikan Masin dan Nanas Masak Lemak Cili Api)

Hi Hello!!! Today I will be sharing with you a kampung (traditional) dish. Simple yet delicious when served with hot, steamy rice. My sister-in-law gave a ripe pineapple over the weekend and I was wondering what to do with it. I cut some to be eaten as snacks and had half left. My hubby said why don't you cook this dish, with salted fish and birds-eyes chillies. Wow....great idea indeed! So I went to the supermarket, got some dried salted threadfin (ikan kurau) and soon after started on it!


*Sebenarnya, saya masak lauk ni cara campak-campak saja. Tapi bagi sesiapa yang inginkan resipi yang lengkap, inilah dia...boleh 'adjust' mengikut citarasa masing-masing.




Ikan Masin dan Nanas Masak Lemak Cili Padi
[Salted Threadfin with Pineapples cooked in Spicy Coconut Gravy]




1-2 pieces salted threadfin (soaked in hot water)
You may use any dried salted fish available in your local asian grocer. 

Pound these till you get a fine paste:
5 shallots
3 cloves glarlic
3-4 chilly padi (birds-eye chillies)
1cm tumeric or 1 teaspoon tumeric powder
(you may also want to add some soaked anchovies here for more flavour)

Coconut Milk
1pc Dried tamarind (asam keping) or lime juice
1 pc tumeric leaf
2-3pcs Kaffir lime leaf
1 lemon grass - pounded at the fleshy part
1/4 pineapple - diced2
red chillies sliced lengthwise

Placed pounded ingredients and coconut milk in a pot, bring to a slow simmer.
Add salted fish, pineapple and rest of ingredients  and bring to a slow boil.

Check for saltiness and sourness according to your preference.

Serve hot with steamy white rice, accompanied with sambal belacan (pounded fresh chillies, garlic, shrimp paste, sugar and lime juice)
