Tantalizing Tandoori Chicken

I saw it, I was inspired and I attempted. The result, not too bad! Pretty tasty and got a few nods of approval. I have browsed a few recipes but ended up adjusting to my taste.


It's pretty easy actually...just mix all the ingredients, leave it to marinade and roast in the oven. You'll get exotic cuisine right in the comfort of your home :)



**I didn't use the exact measurements in mine..

Tandoori Chicken with Yogurt Mint Dip


3 pcs chicken thighs 
- cut scores into the meat.

process:
8 cloves garlic
1 large red onion
5 shallots
1 inch ginger
1 tablespoon chilli powder (less if you prefer it not spicy)
1 teaspoon fennel
1 teaspoon cumin
1 teaspoon corriander
juice of 2 limes
1/2 cup plain yogurt
red colouring 
salt and pepper to taste

- marinade the chicken with the processed spices for at least 4hrs (in the fridge)

- preheat oven to 190dec cel and discard excess liquid accumulated from the marinade. If not your tandoori will be soggy.


- roast chicken for about 45 mins.

- convert the oven to grill (upper heat) and continue to grill chicken for a more crispy top.

Yogurt mint Dip
1 cup (loosely packed) mint leaves
2 cloves garlic
1/2 cup plain yogurt
salt and pepper to taste

Serve Tandoori Chicken with Salad leaves, lime/lemon wedges, onion rings and salad greens.

Can be served along side white rice or Nann.
