ORANGE MUFFINS



Something different for Sahur, a change from the usual Nasi (rice) or bread to help fill the tummy in preparation for the day's fast. It smells so good whilst baking and tastes great when eaten warm. Best of all, it's easy to make, just melt and mix.


You'll need:
Preheat oven to 210deg celcius
12-cup muffin pan, lined with paper cups or you may just grease the pan.


1 3/4 cups of Self-Raising Flour
1 1/2 tablespoon castor sugar
1 teaspoon baking powder
1/4 teaspoon baking soda (bicarbonate of soda)
90 gm butter (melted and cooled)
1/2 cup orange marmalade
1 egg (beaten)
3/4 cup milk
choc chips (optional)
icing sugar to dust over baked muffins (optional).


Place Flour, castor sugar, baking powder and baking soda in a large bowl.
Make a well in the center, pour in the butter, marmalade, egg and milk. 
Stir batter, but do not overbeat. Batter should remain lumpy. Add choc chips if you like.
Spoon batter into prepared tin/cups.


Bake for about 15-20mins, till muffins are well-risen and golden. Cool on wire rack.
Dust with icing sugar if you prefer.
