Comforting Keema

What's your comfort food? I have a few, and Comforting Mutton Keema is simply one of these. The warm subtle spices and rich taste really brings comfort to the soul. And it doesn't matter if I'm having it alone or with lovely Hubby. It brings out such a special feeling, putting a smile to my face each time.

Mutton Keema

500gm Minced Mutton
1cm ginger - minced
6 cloves garlic - minced
cooking oil
2 bombay onions - peeled and diced
1 cup hot water
1/2 cup yoghurt ( I used Mango flavour...yummm)
1/2 cup evaporated milk
2 tomatoes - diced
1 carrot - diced
1 green chillies - sliced
2 red chillies - sliced

Whole Spices:
Cinnamon stick
3 cardamoms
1 clove

Spice Paste:
1 tablespoon curry powder
1 tablespoon powdered cumin ( I also added 1 tablespoon fennel for extra ZING)
1 tablespoon powdered coriander
--Mix these with 1/4 cup water

Method
- Heat oil, saute minced ginger, garlic, diced onions and minced lamb till meat changes color. Add spice paste and stir till fragrant. Add whole spices.
- Add hot water and simmer. When meat is tender, add yoghurt and milk, carrots, tomatoes and chillies.
- Season with salt and pepper.
- For extra zing...melt a tablespoon of ghee on simmering Keema ....Lovely!

Garnish with deep-fried Cashews, fried shallots and coriander leaves.

Serve with steaming white rice or your choice of bread.

** Saya suka masakan ini sebab baki Keema boleh disimpan dalam peti ais untuk dimakan beberapa hari kemudian. Boleh disimpan beku untuk sebulan. Dinginkan Keema sebelum dimasukkan kedalam bekas untuk dibekukan.
