My MI REBUS

I LOVE Mi Rebus - Singapore Style... ever since I was in primary school. The thick spicy gravy with the tinge of sweetness from the sweet potatoes and the base of beef stock never fails to please me. 

Though I'm a little fussy about how thick and sweet plus spicy it should be, I'd rather cook it myself so I can get it tasted my way (...this may not be the most tastiest one of course). 

There are a few variations to cooking the gravy, well, this is mine and am very happy to share it with you. Please feel free to adjust the ingredients to your preference.

My MI REBUS


Yellow noodles - blanched in hot water (you may even use spaghetti)
Bean Sprouts - blanched briefly in hot water.


Gravy:
some cooking oil for sauteing finely pounded paste (tumis) 
2 tablespoon meat curry powder (or less if you prefer yours less spicy)
300 gms beef cut into small pieces
8cups of water
2 medium sweet potatoes - boiled, peeled and mashed.
2cm galanghal - bruised
2 stalks lemon grass - bruised.
3 kafir lime leaves
1/2 cup tau cheo
salt and sugar to taste


To blend into paste:
2 onions - peeled and diced
6 cloves garlic - peeled
2cm ginger - peeled
1/2 cup dried anchovies ikan bilis - soaked and rinsed
1/2 cup dried small shrimps (udang geragao) - optional for more ZING.


For Garnishing:
boiled eggs
crispy fried shallots
sliced green chillies
chopped spring onions and chinese celery


Method:
- Heat up oil. Saute grounded paste till fragrant and add curry paste, tau cheo and stir.
- Add meat, water, sweet potatoes, lime leaves, lemon grass and galanghal and boil for 20mins.
- Add salt and sugar to taste.


Easy Peazy!


** Memang lazat kalau dimasak bersama daging dan tulang lembu. Wow...rasa manis dari rebusan daging akan menambah perisa pada kuahnya. Kuah yang baki boleh disimpan dalam bekas kedap udara dan disimpan dalam peti ais selama 2 minggu.
