Asam Laksa in Jiffy

Another one of my favorites. It's simple and quick! This Asam Laksa recipe I found uses canned tuna instead of having you to steam/boil fish and flaking the meat. What's more, it's so yummy...sour and spicy all in one.You may adjust the spiciness or the sourness of the gravy. I like mine really sour...yummm!



Asam Laksa in a Jiffy

You'll need:


1 pack Laksa noodles - Thick Rice noodles (you may use the short fresh variants or the dried ones in packs but you need to boil and soften them.

2 small cans of tuna in brine/water/oil - Drained


Finely Process in a blender the following:
7 stalks dried chillies - soaked
1cm shrimp paste (to give that base flavour)
1 cloves garlic - peeled
1 onion - peeled
1 lemon grass - sliced thickly


You'll also need:
4 pcs dried tamarind pieces (asam keping)
1 ginger bud (bunga kantan/siantan) - Cut lengthwise into quarters
kesum leaves


For garnishing:
Sliced onions
Sliced red chillies
Mint Leaves
Pineapple slices
Hard-boiled egg -optional
Prawn Paste (Petis) - optional


Method:
- In a blender, process the tuna, chilles, garlic, onions, shrimp paste and lemon grass with alittle water.
- Heat a little oil in a pot and saute the processed ingredients till frangrant.
- Add about 1.5 litres of water, tamarind slices and ginger bud.
- Simmer till gravy boils and thicken slightly. Add salt and sugar to taste.


You may want to adjust the spiciness of the gravy by reducing the amount of chilly used. Adjust the sourness of the gravy with more or less tamarind.


Pour hot gravy over prepared noodles and top it up with the fresh garnishing.
It's ready!

Kalau yang mahu kuah yang tidak berminyak, tidak perlu untuk menumis bumbu tapi boleh direbus dengan air saja hingga bahan-bahannya mendidih dan masak, sebelum menambah asam keping dan bunga siantan.
