The Naturally Sweet Fruit Cake (Diabetic Fruit Cake)

I'd like to share this recipe I found, which totally had my Bak (a traditional Malay call for Father) in mind. No eggs, no butter, no sugar. He loves fruit cake for his afternoon tea, but as his health doesn't allow him to have the conventional rich Fruit Cake, I decided to look this one up for him And guess what? It tasted so yummy! Natural sweetness from the fruit juice and the dried fruit...simply lovely. And not forgetting really healthy too. Let's call it the Naturally Sweet Fruit Cake :)

It keeps really well when wrapped well in wax paper and aluminium foil in the fridge. You may mature it by sprinkling warm juice on the fruit cake and re-wrapping it before storing in the fridge. Keeps for about 4 weeks.



The Naturally Sweet Fruit Cake
2 cups dried fruit ( you may want to rinse and drain it to get rid of the sugar coating)
1 cup sugar fruit juice (any flavour of your choice...I chose dark grape juice)
1 cup mashed bananas
1 1/2 cups Self Raising Flour.
1/2 teaspoon bicarbonate of soda
1 teaspoon mixed cake spice (or you may want to use Lapis spice...yummm)


Method:
Mix all ingredients well in a large bowl with a wooden spoon.
Pour in a prepared greased and lined cake tin (18cm or loaf tin)
Bake for 55 mins in a preheated oven at 170deg celcius.
